The Application of Food Sanitation Online Training Media combined with Social Support for Restaurant Quality in Udon Thani Municipality

Abstract

The objective of this quasi experimental research was to evaluate the effectiveness of the application of online food sanitation training media combined with social support for restaurant quality in Udon Thani municipality. The 220 food handlers from restaurants in Udon Thani municipality were selected by stratified random sampling and divided equally into an experimental and control group. The experimental group was received food sanitation online training media combined with social support for twelve weeks. The data were collected by using knowledge quiz questions, practical and satisfaction survey questionnaires and food sanitation standards assessment form in accordance with food sanitation requirements of the Department of Health. The data were analyzed using descriptive statistics, while wilcoxon signed rank test and Mann-Whitney U test were used for mean difference comparison with significance level of 0.05. The results showed that after an e-learning post-test score of the experimental group’s on food sanitation knowledge (18.20+1.269) was significantly higher than those of the pre-test (16.09+2.433) and comparative group scores (15.74+1.994) at p<0.001. The post-test score of the experimental group’s on food sanitation practice (43.47+2.175) was also significantly higher than those of the pre-test (40.28+2.974) and comparative group scores (39.28+3.116) at p<0.001. Moreover, the restaurants in the experimental group had passed the physical, biological and the Clean Food Good Tastes (CFGT) standards at 92.73%, 77.29% and 70.91%, respectively. Furthermore, satisfaction in all aspects of the online food sanitation training media was at a high level (2.56+0.495). In conclusion, the application of online food sanitation training media combined with social support was effective to improve knowledge and practices and increase restaurant quality. The online training media should be used to promote and strengthen food sanitation knowledge and practices of food handlers in the restaurants in other similar areas.
