The Quality Improvement of New Normal Street Food through Network Participation, Kamphaeng Phet Province

This action research study aimed to develop the new normal street food model through network participation, Kamphaeng Phet province. The study is implemented into 4 phases; 1st phase of analyse the situation of street food problem; 2nd phase of develop new normal street food model through network participation; 3rd phase of testing the model in Ton Pho market, Muang district; 4th phase of evaluate the new normal street food model through network participation. The study tools composed of “Street Food Good Health” evaluation form, “COVID-19 Free Street Food” evaluation form, and food hygiene evaluation and interview form. The data is analysed by descriptive statistics, compared content analysis of qualitative data before-after results by the Exact Mc Nemar Test. The study revealed; before the study, Ton Pho Market did not have the clear model for the street food development, lack of network participation. The food stalls with clean food standards were 10.6% and did not have the preventive and control measures of COVID-19. After new normal street food model implementation through network participation, there were 4 dimensions of Street Food Good Health development and COVID-19 Free Street Food improving from standard to good level. The food stalls with clean food standards were 36.2%. The vendors scored a higher level of knowledge on Food Hygiene from 51.1% to 93.6% significantly (p-value = 0.031). The customers participated in COVID-19 preventive and control measures i.e. wearing medical or cloth face mask, performing registration or application, having a body temperature screening, social distancing and satisfied that the market has improved cleanliness, orderliness and clear measures to prevent COVID-19 infection. This policy suggests implementing the new normal street food model into other street food markets, Kamphaeng Phet province in the future.
